Satureja montana - Winter Savory is a sub-shrubby perennial herb that is perfectly at home in well-drained scrabble in a xeric condition. Winter Savory is a densely mounding evergreen with small dark green leaves which turn maroon when cold seasonal temperatures settle. It has a long bloom season, mid to late summer, and the flowers are beloved by bees. The packed lavender-pink flowers loosely remind me of clustered mint flowers with which it is related (Lamiaceae). But fear not - this is a well-behaved plant that stays in place. Carole Miller from Topmost Herb Farm in Coventry, CT tells us that Winter Savory is excellent when used in most any bean dish. Superb in impoverished conditions plant Satureja montana in sharply draining soil sited in full, blazing sun. We cut ours back every couple of years to maintain a tidier compact plant. Cutting grown.
